Homage to my favourite beef wellington by Chef Calum Franklin and Chef Nokx Majozi. I still remember the very first time I tried this at Holborn Dining Room and was blown away by the level of intricacy, deliciousness and flavour of this incredible dish. The most tender beef with just the right amount of pink wrapped in a blanket of aromatic herby mushroom duxelles and crispy pastry perfection, precisely latticed and dressed with a jewel-like thyme leaf in each diamond - this is truly on its own level of awe-inspiring MC Escher-esque gorgeousness, reflected in both Chef Calum’s beautiful pie designs and the craftsmanship of the actual dish in reality.

I tried making this a few times for Christmas, and am always inspired by the attention to detail across every single element - it takes me two days, worked diligently across the six-page recipe from Chef Calum’s gorgeous cook book ‘The Pie Room’ - and it’s truly welly worth it.
