Super fresh cured stone bass layered with bright cedro, verdant shiso, vibrant radishes and luscious blood orange, and served with what can only be described as the most incredible luminous liquid rainbow sauce made from wild garlic, dill oil, caviar pearls and what feels like liquid sunshine. A truly unforgettable and kaleidoscopic experience across all the senses. Buon appetito!

What I love about Chef Adam’s unique zero-waste approach is how he turns typically discarded bits into pure beauty, elegance and flavour. Every stalk, seed, skin and shell is transformed into sauces, garnishes, cocktails and so much more. I admire his principle of only introducing a new dish if every single part of an animal or ingredient is fully used - a truly wonderful way to honour nature.

I will never forget my first experience at Core.
The way each dish elevates the best of nature through imagination and craft.
The personality of her distinctive modern British haute cuisine and witty homage to iconic favourites.
The respect for ingredients that can only come from first-hand farming experience and a deep reverence to nature.
One of my favourite dishes is her Isle of Harris Scallop Tartare, a truly stunning piece of edible art that is as magnificent as it is delicious. Served on its own piece of Eden, the shell opens to reveal delicate petals of an Isle of Harris scallop decorated with foraged coastal gems, bathing in a gorgeous sea vegetable consommé that feels like a dive into the freshest waters of the Outer Hebrides. I have never felt more alive. The purest of joy and perfection.

If I could choose a plant-forward dish that honours seasonality beautifully, as someone who loves foraging, it would be my favourite savoury dish at 74 Charlotte Street by the brilliant Chef Ben Murphy - enter their deeply delicious Mushroom Tart.
Layers upon layers of gorgeous flavourful Maitake ‘Hen of the Woods’ mushrooms that taste of nature at its finest, revealing a rich elixir of golden sunshine egg yolk within, and punctuated with parmesan to create a unique earthy deliciousness whose savoury moreishness is elevated with the gentlest hint of paprika heat. The craft, balance and intensity of flavours of this tart are truly outstanding - so much so that it is impossible for me to not order it every time. Grateful that we can experience this level of nature and perfection in the heart of London. Bon appétit!

May every step bring you peace and harmony.
About the dish: Delicious savoury cakes made from turnip, dried scallops and prawns, shiitake mushrooms and Chinese sausage known as lap cheong 「臘腸」. These step-like cakes are divine dipped into sweet soy sauce, chilli sauce or the super moreish XO sauce. The word ‘cake’「 糕」sounds the same as「高」or ‘high’, ringing in the rise of good fortune for the new year. They are crispy on the outside yet deliciously chewy and savoury on the inside: like a cozy hug on a cold day, and the comforting anticipation of good things to come with each bite.
I feel deeply grateful that my nan taught me her own secret recipe and method to making this from scratch, which I will forever treasure as a family heirloom of intergenerational joy. She always said that it is of utmost importance to never scrimp on the quality of ingredients, nor the ratio between the flavoursome ingredients and the grated turnip mix. The benchmark is being able to taste a harmonious mix of unctuous savoury deliciousness, encompassing all of their unique and distinct flavours and textures, whilst being cuddled evenly in a white cloud of soft earthy turnip. It is so, so good – not just for LNY, but also enjoyed throughout the year too.
「大吉大利」in the red plaque means ‘big luck’, and 「福」in the red diamond means ‘good fortune’. Gold coins and ingots symbolise wealth and abundance.

About the dish: Mini golden treasure bags known as Thung Thong, they originate from Thai Royal Cuisine, dating back to the Ayutthaya Kingdom (1351–1767). These little pockets of joy are synonymous with wealth and are filled with minced meat or seafood, and vegetables like mushrooms, water chestnuts, carrots and bamboo shoots, each one tied elegantly with an emerald chive ribbon.
They’re good fun to make, not to mention an easy way to get your five-a-day in! It is both a colourful explosion inside and a riot of fabulous textures when you bite into one. Jujubes or red dates represent wealth, prosperity and happiness. And a lucky gold coin calls in wealth and abundance.

About the dish: Small slices of sweet golden deliciousness, crispy on the outside and pleasurably lightly chewy on the inside (known as ‘QQ’ in Chinese). A delicious sticky rice cake that symbolises the arrival of the new year, and sounds the same as「年高」or ‘Year High’ – symbolising that the best is yet to come. 「福」in the red diamond means good fortune, tangerines are a homonym of ‘luck’ and gold ingots symbolise wealth.

About the dish: Mini pearly moons of chewy deliciousness (known as ‘QQ’ in Chinese) with luscious black sesame lava inside symbolising longevity. The roundness 「圓」 of these delicious glutinous rice balls symbolises harmony, completeness 「完美」 and reunion 「團聚」, especially when shared together under the moon – which is also why this dish is enjoyed during the Mid Autumn Festival which celebrates the biggest full moon of the year. Baby peach blossoms represent beauty, love and new beginnings.「福」in the red diamond means ‘good fortune’.

I absolutely love pies, and to celebrate this delicious day, I wanted to honour one of the most beautiful and memorable pie collabs that I had the good fortune of trying at last year’s British Pie Week: enter the ‘Posh Pork Pie’ by Chefs Jamie Shears of The Audley Public House and Alex Dilling of Alex Dilling at Café Royal.
I still remember the moment it was served when I had it at The Audley Public House – it was so stunning, you could hear audible gasps and pins drop. It was an intricate piece of architectural perfection, with glossy crispy golden pastry, delicately braided and punctuated with little gems of thyme leaves, and upon cutting, unleashing the most incredible aroma of earthy depth and elevated deliciousness. This one had gorgeous layers of black truffle, boudin noir, Alsace bacon, duck liver, Paris ham, Lardo di Colonnata, trumpet mushrooms, and Cognac inside, and was served with a wonderful truffle mash and delicious roast chicken gravy with morel mushrooms. It was honestly one of the most elegant and unforgettable pies I’ve ever had, and it made me appreciate the incredible creativity and craftsmanship that went into creating this. A truly unique pie collab that I hope we can experience again in the future.

I absolutely love ramen in all its regional permutations, especially when it’s chilly outside when only a steaming hot bowl of something cozy, slurpy and yummy will do.
This lobster ramen by Robin Kosuke of Robin’s Ramen is stunning and so, so good - it’s ramen perfection crowned with deliciously seared lobster that’s super fresh in flavour and texture, with an unctuous umami and gorgeous broth whose depth is only possible with the impressive amount of lobster shells they use to make it. A special and unforgettable ramen that I cannot recommend highly enough.

Nothing says good times quite like a jolly tipple, and a special one that comes to mind, especially during the festive season, is the Negroni della Casa by the late, great Russell Norman of Brutto.
It is like fiery liquid sunshine, bringing warmth like a sun-kissed afternoon and gorgeous bittersweet deliciousness. According to Russell, whose version uses Nostrano gin, "The combination of Campari, vermouth and orange is the essence of agrodolce, (meaning bittersweet); it's the magic of Italian cuisine." I miss his warmth, generosity and kindness, and for being one of the originals who openly welcomed walk ins and solo diners. To dear Russell, Cin Cin.

Prawn Miang bites with sour fruits, peanuts, ginger, lime on betel leaf by the brilliant Chef Sebby Holmes of Farang, London.
This is such a gorgeous, colourful and multi-sensorial dish in so many ways. Originating from "Miang Kham" which means "one bite-size wrap”, these are open parcels of joy that are updated seasonally at Farang. These ones have succulent prawn, sour fruits, crunchy peanuts, zingy ginger, and are garnished with Kaffir lime leaf chiffonade and fragrant crispy shallots, beautifully presented on aromatic betel leaves – all of it to be enjoyed in one delicious bite. This playful mélange of amazing colours, flavours, smells and textures is such a joy to savour – and it’s one of my favourite dishes on the menu.

There is roast duck, and then there is Roast Duck. This is the very special ‘Memories of Peking Duck’ by chef anthropologist Chef Andrew Wong of A. Wong – one of my favourite Chinese restaurants in London. It’s the classic Peking duck, reimagined in such a way that it manages to balance deep reverence for traditional Forbidden City culinary techniques with timeless innovative ways to experience it.
The brilliant thing about this dish is that one can decide which end to bite into first, making it both a playful and uniquely sensorial experience. The duck is not only perfectly roasted; it melts instantly in your mouth with delicious savoury-sweet caramelisation: it’s mallard with Maillard perfection. Combined with homemade plum sauce, Oscietra caviar and truffle with cucumber inside, it elevates thetraditional dish into unforgettable levels.
Undoubtedly my favourite dish from his ‘Touch of the Heart’ menu, which translates as 「點心」 (‘dim sum’) and is a millefeuille of meaning: embodying the spirit of putting heart 「用心」 and thoughtfulness 「心思」 to create bite sized treasures of joy (dim sum 「點心」) that truly touch the heart (「點心」).

This completely changed the way I saw the soufflé - in fact, technical panache aside, I never really fully appreciated how transformative a soufflé can be until I tried this.
It is that soufflé by Chef Ben Murphy of 74 Charlotte Street restaurant – a sunlit cloud of warm joy, upon which sits delicious apple crumble ice cream, topped with crispy oats and oozy caramel. It is like all the best flavours of fall wrapped in a big hug of cozy deliciousness. The hardest bit is waiting for the ice cream to melt a bit so that all of these layers can be enjoyed harmoniously. It is so, so good and I can’t stop thinking about it.

A very special slice of paradise that made me fall in love with eel. Dominos of deep smoky deliciousness draped with creamy layers of hot horseradish and mustard cream, sandwiched by two slices of crispy sourdough (ideally Poilâne according to Chef Jeremy) and dressed with a luscious ribbons of red onion pickle. A chef whose writing in his book ‘Cooking’ is every bit wondrous as his food. Bon appétit!

This is without a doubt one of the most colourful, flavourful and elevated instant noodles ever – not to mention one of the best hangover cures (guilty as charged). It was created by Chef Luke Farrell of Speedboat Bar as a modern interpretation of the famous Thai late night drinking street food dish by Jeh O Chula restaurant. At Speedboat Bar, this is teamed with bright lights, beer towers and cracking cocktails, with delicious food and decor inspired by Bangkok’s Chinatown. What’s amazing is Chef Luke’s relentless appreciation of the diversity of Thai food – having travelled to Thailand for many years, he discovers local ingredients, regional cooking techniques, and even plants his own Thai herbs in his greenhouse in the U.K.

The original soup dumpling (aka ‘Xiaolungbao’ or 「小籠包」) by the OG Din Tai Fung. Little mouthfuls of exploding savoury succulence – just the perfect amount of filling and soup inside wrapped in delicate air-light dough, so full of soul warming goodness. The pork filling is the classic one, though the spicy crab one in Bangkok or the truffled pork one in Vancouver are also worth trying. I like to bite the tip of the top off to let some steam out (not to mention sample the magical aroma) before enjoying it in its entirety.

Homage to the delicious roasted bone marrow and parsley salad by Chef Fergus Henderson of St. John – the celebrated symbol of their conscientious nose-to-tail philosophy thanks to the inimitable Anthony Bourdain where nothing is wasted and depth of flavour can be found in unexpected places: “If you're going to kill the animal it seems only polite to use the whole thing.”
I love the timelessness of his dishes, which Chef Fergus says are about "400 years out of date" as “if you are never fashionable, you are never going to be out of fashion.” This dish is one where I wouldn’t want to waste even the tiniest bit, as it’s so divine, deliciously unctuous and deeply gratifying to savour.

Although he’s most famous for his sweet creations, it’s actually his croissant, the plainest and most humble of his creations, that captivates me.
