Homage to my favourite sandwich in the world: the gravity-defying OG Quo Vadis smoked eel sandwich by the marvellous Chef Jeremy Lee.
A very special slice of paradise that made me fall in love with eel. Dominos of deep smoky deliciousness draped with creamy layers of hot horseradish and mustard cream, sandwiched by two slices of crispy sourdough (ideally Poilâne according to Chef Jeremy) and dressed with a luscious ribbons of red onion pickle. A chef whose writing in his book ‘Cooking’ is every bit wondrous as his food. Bon appétit!
