Homage to the wonderful Hide pea and Wye Valley asparagus, fresh peas, yuzu and ricotta tartlet by Chef Director Joshua Angus – a lovely way celebrate summer, and honour Great British Pea Week.
A vibrant miniature garden, this tartlet is a bouquet of delicious verdant flavours. Super fresh peas, asparagus, garlic flowers and geranium petals, crowned on a light silky pea purée and yuzu, with a layer of divine pine nut praline underneath. The green pea plant is one of the my favourite foraging gems, as it’s one the few where pretty much every single part is edible – the tiny emerald pods, the pods, the flowers, the shoots and the leaves.
