Happy Friday, and Happy National Lobster Day!
Lobster is one of my maritime favourites – homage to the very special Cornish lobster baked in fig leaf by Chef Josh Angus of Hide.
There is something deeply elemental about cooking with fire and using nature’s ingredients as its own packaging to honour seasonality and welcome the arrival of Autumn. This incredible lobster is baked in fig leaf, where its sun-kissed sweetness and caramel aroma come to life and infuse the lobster through its aromatic smoke as it dances over precisely controlled flames.
Sculpted by fire, the fig leaf is like a velvet robe that protects its precious fiery sunset within – the super fresh, sweet and succulent Cornish lobster, perfectly cooked. Underneath it is a fabulous and wonderfully textured blend of macerated figs, peanut praline, coconut & tamarind sauce.
This reverence for nature, quality and craftsmanship echoes the natural beauty of my favourite bit of the restaurant – the beautiful flowing staircase by Atmos Studio nspired by nature, which feels like delicious time travel with each step.
