Dedicating this special day to honour one of my all-time favourite chefs and restaurant: Chef Clare Smyth of Core By Clares Smyth. 

I have long admired her unique vision, led by her relentless pursuit of excellence (as evidenced by her incredible journey and integrity), as well as her dedication to her team, producers and suppliers (all of whom are deeply embedded throughout her beautiful eponymous book). 

I will never forget my first experience at Core.

The way each dish elevates the best of nature through imagination and craft.

The personality of her distinctive modern British haute cuisine and witty homage to iconic favourites.

The respect for ingredients that can only come from first-hand farming experience and a deep reverence to nature.

One of my favourite dishes is her Isle of Harris Scallop Tartare, a truly stunning piece of edible art that is as magnificent as it is delicious. Served on its own piece of Eden, the shell opens to reveal delicate petals of an Isle of Harris scallop decorated with foraged coastal gems, bathing in a gorgeous sea vegetable consommé that feels like a dive into the freshest waters of the Outer Hebrides. I have never felt more alive. The purest of joy and perfection.
