When the weather gets nippy, this is one of my go-to’s to warm up – it’s full of soul nourishing goodness, especially when it’s deliciously hot like my favourite spicy seafood Phở hải sản fby Nep Nep.
The thing I always look out for in a Phở above everything, and the deciding factor for me, is the quality, depth and purity of its broth. This one is very authentic and based on traditional Vietnamese culinary techniques, not to mention completely made from scratch, and remarkably MSG-free (it’s actually amazing how rare this is, and thus a real blessing because it tastes genuinely real and homemade, which your body (and brain) will thank you for). It’s also gone through many dozens of tests to get right, and the quality and flavour of their broth are outstanding - a perfect balance of fragrant aroma, savoury and sweet freshness with gorgeous depth.
It is both a delicious wake-up call (accurately described by Anthony Bourdain as “a transcendent experience”), as well as a wonderful restorative balm to feel centred and grounded again. I love this one because of its treasure hunting possibilities – a lucky discovery dip into a vibrant broth to explore fresh succulent prawns and tender squid, as well as super fresh aromatics. It’s so good, I can easily eat this three times a day.
