A. Wong Memories of Peking Duck

There is roast duck, and then there is Roast Duck. This is the very special ‘Memories of Peking Duck’ by chef anthropologist Chef Andrew Wong of A. Wong – one of my favourite Chinese restaurants in London. It’s the classic Peking duck, reimagined in such a way that it manages to balance deep reverence for traditional Forbidden City culinary techniques with timeless innovative ways to experience it.
The brilliant thing about this dish is that one can decide which end to bite into first, making it both a playful and uniquely sensorial experience. The duck is not only perfectly roasted; it melts instantly in your mouth with delicious savoury-sweet caramelisation: it’s mallard with Maillard perfection. Combined with homemade plum sauce, Oscietra caviar and truffle with cucumber inside, it elevates thetraditional dish into unforgettable levels.
Undoubtedly my favourite dish from his ‘Touch of the Heart’ menu, which translates as 「點心」 (‘dim sum’) and is a millefeuille of meaning: embodying the spirit of putting heart 「用心」 and thoughtfulness 「心思」 to create bite sized treasures of joy (dim sum 「點心」) that truly touch the heart (「點心」).
