In the spirit of commemorating my favourite oysters, this is a delightfully moreish oyster by the super talented Tom Brown (who won the London’s Best Dressed Oyster Award at the 2024 London Oyster Championships) of the beloved Pearly Queen, which sadly no longer exists. I feel deeply grateful to have experienced this incredibly special oyster.
This is an insane mouth party of crackling batter, tongue-numbingly spicy buffalo sauce and drizzled with delicious ranch sauce on top, all before revealing the creamiest of Carlingford oysters within. I wish I could eat this again one day.
