I did the thing you’re probably not supposed to do in restaurants - I had some delicious grilled seafood at Cervejajaria Ramiro and appreciated their freshness so much that I asked if I could take home all the empty shells from my plate (a confession: I sometimes do this with good bones too). I didn’t want them to go to waste and felt there was still more flavour in them, especially as they had been grilled. I’m so glad I though, because their second life flavour at home was amazing, especially when slowly simmered with fennel, tomato, shallots and tonnes of garlic.
