Homemade Hong Kong Claypot Rice

Hand painted deliciousness from London via Hong Kong.

This is what I make at home when it’s cold and I’m feeling nostalgic. Claypot rice or「煲仔飯」(aka ‘little pot of rice’), was created by night market street food stalls in Hong Kong, cooked over fire. This creates a distinctive alchemy of flavours, juices and caramelisation of the ingredients that magically infuse the rice, of which the best bit is the crispy burnt bits at the bottom called「飯焦」. I made this one with slices of unctuous Chinese sausage and duck egg covering the rice with shiitake mushrooms. Literally the biggest hug in a pot.
