This one is one of my all-time favourites by the amazing Mark Hix of Hix, which sadly no longer exists. This is his special Beef & Oyster Pie that inspired the creation of his eponymous restaurant, an homage to the traditional British oyster and chop houses of the 1800s. It is truly one of the best pies I’ve ever had – especially on a cold wet day.
A crispy, flavourful and verdant breadcrumbed oyster sitting on top of a delicious flaky, golden pie crust with unctuous beef and Hix Oyster Ale inside. You know it’s a good pie when the crust is as flavourful as the filling.
